Patriotic Poke Cake

A festive and colorful poke cake perfect for celebrations like the Fourth of July and Memorial Day. This easy dessert combines vibrant layers and delicious flavor for a visually stunning treat.

  • 1 box of white cake mix
  • 1 cup of water
  • 1/3 cup of vegetable oil
  • 3 large eggs
  • 1 cup of strawberry-blueberry gelatin
  • 1 cup of boiling water
  • 1 cup of cold water
  • 1 cup of whipped topping
  • Fresh strawberries and blueberries for topping
  • Food coloring (red and blue, optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the cake batter by combining the white cake mix, water, vegetable oil, and eggs in a large mixing bowl and mix until smooth.
  3. Bake the cake for 25-30 minutes in a greased 9×13-inch baking dish, or until a toothpick comes out clean.
  4. Cool the cake completely once baked.
  5. Poke holes all over the cake using the handle of a wooden spoon.
  6. Prepare the gelatin by dissolving it in boiling water, then adding cold water and mixing well.
  7. Fill the holes in the cake with the gelatin mixture.
  8. Chill the cake covered in plastic wrap for at least 4 hours or overnight.
  9. Top the set cake with whipped topping.
  10. Garnish with fresh strawberries and blueberries, and optional food coloring.

Notes

You can experiment with different gelatin flavors and fruit toppings to customize your poke cake. For a healthier twist, consider using Greek yogurt instead of vegetable oil.
