Cheesecake-Stuffed Apple Cider Cookies

Delicious cookies bursting with apple cider flavor and rich cheesecake filling, perfect for fall.

  • 1 cup apple cider
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 eggs
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Combine the softened butter, granulated sugar, and brown sugar in a large mixing bowl. Cream together until fluffy, about 3-5 minutes.
  3. Add the eggs and vanilla extract, mixing until just combined.
  4. Warm the apple cider in a small saucepan until just warm, then pour into the mixture while mixing on low speed.
  5. Sift together the flour, baking soda, baking powder, ground cinnamon, and salt in a separate bowl.
  6. Mix the dry ingredients into the wet ingredients gradually in three batches until just combined.
  7. Prepare the cheesecake filling by mixing softened cream cheese with powdered sugar until smooth and creamy.
  8. Scoop about 2 tablespoons of cookie dough, flatten slightly, add a teaspoon of cheesecake filling, and fold the dough around it to shape into a ball.
  9. Bake for 10-12 minutes or until edges are lightly golden and centers look puffy.
  10. Cool on baking sheets for 5 minutes before transferring to a wire rack to cool completely.

Notes

Serve with a dusting of powdered sugar and a side of apple cider or whipped cream for an extra treat.
