Chewy Pumpkin Snickerdoodle Cookies with Maple Glaze

  • ¾ cup (170 g) unsalted butter, softened
  • 1 cup (200 g) granulated sugar
  • ½ cup (110 g) light brown sugar, packed
  • 1 large egg, room temperature
  • 1 teaspoon (5 ml) pure vanilla extract
  • ½ cup (120 g) pumpkin puree
  • ¼ cup granulated sugar + 1 teaspoon ground cinnamon (for rolling)
  • ¼ cup (60 ml) pure maple syrup
  • ½ cup (60 g) powdered sugar, sifted
  • 1 tablespoon (14 g) unsalted butter, melted
  • ½ teaspoon (2.5 ml) vanilla extract (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the dry ingredients by whisking together the flour, baking soda, ground cinnamon, nutmeg, and salt.
  3. Cream the butter with granulated and brown sugars until light and fluffy (about 3-5 minutes).
  4. Incorporate the egg, vanilla extract, and pumpkin puree until combined.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Roll the dough into balls (about 2 tablespoons) and coat with a mix of granulated sugar and cinnamon.
  7. Line a baking sheet with parchment paper and place the dough balls on it, spaced appropriately.
  8. Bake for 10-12 minutes, until edges are golden but centers are soft.
  9. Cool on the baking sheet for a few minutes before transferring to a wire rack.
  10. Prepare the maple glaze by whisking together maple syrup, powdered sugar, melted butter, and vanilla extract.
  11. Drizzle the glaze over cooled cookies and allow it to set for a few minutes. Enjoy!
