  • 1 ripe mango, diced
  • 4 cups arugula
  • 1/4 cup pine nuts, toasted
  • 2 tablespoons honey
  • 1 lime, juiced
  • 2 tablespoons olive oil

Instructions

  1. Wash your greens! Rinse the arugula under cold water and pat dry.
  2. Dice the avocados and mango.
  3. Heat a small skillet over medium heat and toast the pine nuts for 3-5 minutes.
  4. Combine honey, lime juice, and olive oil in a bowl, whisking until blended.
  5. Toss the arugula, diced avocados, mango, and toasted pine nuts in a mixing bowl.
  6. Drizzle the dressing over the salad, tossing gently to combine.
  7. Sprinkle with salt and pepper to taste.
