Balsamic Flank Steak with Grilled Zucchini and Whipped Feta

A flavorful dish combining juicy flank steak with grilled zucchini and creamy whipped feta, perfect for any occasion.

  • 1 lb flank steak
  • 2 medium zucchinis, sliced
  • 1 cup feta cheese
  • 1/2 cup heavy cream
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 2 tablespoons honey
  • Salt and pepper to taste
  • Fresh herbs (optional, for garnish)

Instructions

  1. Prep the Steak: Start by marinating your flank steak. In a bowl, mix the balsamic vinegar, olive oil, honey, salt, and pepper. Place the steak in a resealable bag or shallow dish and pour the marinade over it. Let it soak in all that flavor for at least 30 minutes, or overnight if you want to go all out!
  2. Grill the Zucchini: While the steak is marinating, slice your zucchinis into rounds. Preheat your grill to medium-high heat. Toss the zucchini slices in a little olive oil, salt, and pepper. Grill for about 4-5 minutes each side until they’re tender and have those lovely grill marks. Set them aside.
  3. Prepare the Whipped Feta: In your blender or food processor, add the feta and heavy cream. Blend until you achieve a smooth, creamy texture. Taste it, and adjust salt and pepper as desired.
  4. Cook the Steak: Once your steak has marinated, preheat your grill to high. Grill the steak for about 4-5 minutes on each side for medium-rare. Use a meat thermometer; you’re shooting for 130°F (54°C). Let it rest for about 5 minutes before slicing.
  5. Plating it Up: Slice your steak against the grain and arrange it on a platter with grilled zucchini. Drizzle whipped feta on top and garnish with fresh herbs.
