BBQ Chicken Skewer Salad

A fresh and vibrant BBQ Chicken Skewer Salad packed with juicy marinated chicken, grilled corn, and colorful veggies.

  • 2 pounds boneless skinless chicken breasts
  • 3 tbsp avocado oil
  • 1 tsp kosher salt
  • 2 cups BBQ Sauce (Primal Kitchen brand)
  • 8 [6-inch] wooden skewers (pre-soaked)
  • 1 cup light tasting oil (optional)
  • 1 egg
  • ½ cup unsweetened full-fat coconut milk
  • 2 tbsp lemon juice
  • 1 tbsp red wine vinegar
  • 1 tsp kosher salt
  • 1 tsp onion powder
  • 2 cloves minced garlic
  • ¼ cup finely chopped fresh dill fronds
  • ¼ cup finely chopped fresh parsley
  • 1 tsp freshly cracked black pepper
  • 4 ears corn (omit for Whole30)
  • 2 tbsp avocado oil
  • 8 cups thinly sliced romaine lettuce (or 2 small heads)
  • 6 green onions (thinly sliced green part only)
  • 2 cups quartered grape tomatoes
  • 1 [15-ounce] can black beans (drained and rinsed, omit for Whole30)
  • ¼ cup loosely packed freshly chopped cilantro leaves
  • 2 tbsp freshly chopped basil leaves
  • 1 avocado (peeled and diced)

Instructions

  1. Marinate the chicken by cutting it into cubes and mixing with avocado oil, kosher salt, and BBQ sauce. Let it sit for at least 30 minutes.
  2. Preheat the grill to medium-high temperature.
  3. Prepare the skewers by threading marinated chicken onto them, alternating with colorful veggies if desired.
  4. Grill the corn, brushing it with avocado oil and cooking until slightly charred, about 10 minutes.
  5. Grill the chicken skewers for about 12-15 minutes, flipping them halfway through until cooked to 165°F (75°C).
  6. Make the dressing by mixing egg (if using), coconut milk, lemon juice, red wine vinegar, kosher salt, onion powder, minced garlic, dill, parsley, and black pepper until smooth.
  7. Toss the salad base with lettuce, grilled corn kernels, green onions, grape tomatoes, black beans (if using), cilantro, and basil. Drizzle with dressing and toss gently to coat.
  8. Assemble the salad on plates or a large platter, topping with grilled chicken skewers and diced avocado. Drizzle with remaining dressing.

Notes

This salad is best served fresh and can be customized with various herbs and dressings.
