Delightful Beef Enchiladas

A comforting beef enchilada recipe that’s easy to make and full of flavor, perfect for family gatherings.

  • 1 lb. ground beef
  • 1/2 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 (1 oz.) packet taco seasoning
  • 1 tablespoon tomato paste
  • 1 (4 oz.) can diced green chiles
  • 1 (15 oz.) can red enchilada sauce
  • 8 corn tortillas
  • 3 cups Mexican cheese blend, shredded and divided
  • Sour cream, for drizzling
  • Fresh cilantro, for garnish
  • Pico de gallo, for garnish
  • Diced avocado, for garnish
  • Shredded lettuce, for garnish
  • Sliced green onions, for garnish
  • Chopped red onions, for garnish
  • Cotija cheese, for garnish
  • Hot sauce, for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Sauté the diced onion in a large skillet over medium heat for about 3-4 minutes until translucent.
  3. Brown the ground beef with minced garlic and season lightly with salt, cooking for 6-8 minutes.
  4. Add the taco seasoning and tomato paste to the beef, then fold in the diced green chiles and cook for another 2-3 minutes.
  5. Warm the tortillas in a skillet or microwave for 20-30 seconds to make them pliable.
  6. Assemble the enchiladas by spreading some enchilada sauce in a baking dish, filling each tortilla with beef mixture and cheese, then rolling them up and placing them seam-side down.
  7. Top the rolled enchiladas with remaining sauce and cheese.
  8. Bake covered with foil for 20 minutes, then uncover and bake for an additional 10-15 minutes until cheese is melted.
  9. Garnish with your favorite toppings and serve.

Notes

Feel free to substitute ground beef with ground turkey or black beans for a vegetarian option.
