Beef & Mushroom Pie

  • 1 lb cubed chuck or brisket beef
  • 8 oz cremini or button mushrooms, sliced
  • 1 package puff pastry, thawed
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 2 cups low-sodium beef broth
  • 1 tsp fresh thyme, chopped
  • 1 tsp fresh rosemary, chopped
  • Salt and pepper to taste
  • 1 egg, beaten (for egg wash)
  • Oil for cooking

Instructions

  1. Prep the ingredients: Chop beef into bite-sized cubes; dice onion, and slice mushrooms.
  2. Sear the beef: Heat oil in a skillet over medium-high heat, sear beef until golden brown (5-7 minutes), then remove.
  3. Sauté the aromatics: Add oil if needed, cook onions until translucent (3-4 mins), then add garlic and mushrooms (4-5 mins).
  4. Create the filling: Return beef, stir in herbs, broth, and seasonings; simmer for 15-20 minutes until thickened.
  5. Preheat your oven to 400°F (200°C).
  6. Assemble the pie: Roll out puff pastry; line a pie dish, add filling, and top with another pastry layer; pinch edges to seal.
  7. Cut slits in the pastry to vent.
  8. Brush with egg wash and bake for 25-30 minutes until golden brown.
  9. Let cool for 10 minutes before slicing.

Notes
