Wholesome Beef Stew

A comforting beef stew recipe perfect for autumn gatherings.

Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 4 carrots, chopped
  • 4 Yukon Gold potatoes, chopped
  • 2 stalks celery, chopped
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 4 cups beef broth
  • 1 cup red wine
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Fresh herbs (bay leaves, thyme, rosemary), to taste

Instructions

  1. Prep your ingredients by chopping the beef chuck into 1-inch cubes and seasoning with salt and pepper.
  2. Brown the meat in a large dutch oven or heavy-bottomed pot with olive oil until golden-brown, about 3-4 minutes per batch.
  3. Saute the onions, garlic, and celery for about 5 minutes until softened.
  4. Add the chopped carrots and potatoes, stirring for another couple of minutes.
  5. Deglaze the pot with red wine, scraping up brown bits for flavor and allowing it to reduce for 2-3 minutes.
  6. Bring it all together by adding the browned beef back into the pot, along with broth to cover the contents.
  7. Let it simmer on low for 1.5 to 2 hours until the beef is tender.
  8. Adjust seasoning with salt, pepper, or Worcestershire sauce before serving.
  9. Serve hot, optionally garnished with fresh herbs and accompanied by crusty bread or rice.

Notes

Feel free to customize the recipe with low-carb vegetables or additional spices. This stew also freezes well! Cooked in a slow cooker if desired.
