Beef Stroganoff

A comforting and creamy Beef Stroganoff that brings back cherished memories and flavors, served over egg noodles.

Ingredients

  • 1 lb Beef Strips (sirloin or flank steak)
  • 8 oz Button or cremini Mushrooms
  • 1 cup Sour Cream
  • 8 oz Egg Noodles
  • 2 tbsp Olive Oil
  • 1 cup Beef or Chicken Broth
  • Salt and Pepper to taste
  • Fresh Parsley for garnish

Instructions

  1. Prep your ingredients: Slice the beef into strips, chop the mushrooms, and measure out the sour cream.
  2. Sear the beef: Heat a skillet over medium-high heat and add oil. Once hot, add beef strips and sear for 2-3 minutes on each side until browned. Remove and set aside.
  3. Sauté the mushrooms: In the same skillet, add mushrooms and sauté for about 5 minutes until golden.
  4. Build the sauce: Lower heat, add broth, and scrape the bottom of the pan to mix in browned bits. Let simmer for about 5 minutes.
  5. Stir in the sour cream: Lower the heat and stir in sour cream until well incorporated.
  6. Combine the beef: Add the seared beef back, stirring to coat in the sauce. Cook for another 2-3 minutes.
  7. Cook the noodles: Cook egg noodles according to package instructions.
  8. Serve it up: Serve Beef Stroganoff over egg noodles and garnish with fresh parsley.

Notes

For a healthier twist, consider using whole wheat noodles or adding more vegetables.
