High-Protein Pumpkin Bread

A warm and cozy homemade pumpkin bread recipe packed with protein for a healthier twist on a classic fall favorite.

  • 1 1/2 cups all-purpose flour
  • 1 1/4 cups sugar
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 2 teaspoons cinnamon
  • 1/4 teaspoon cloves
  • 1/4 teaspoon allspice
  • 1/2 teaspoon ginger
  • 1 teaspoon vanilla
  • 2 eggs
  • 1 cup pumpkin puree
  • 1/3 cup milk
  • 1/2 cup canola oil

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix together the flour, sugar, baking soda, baking powder, salt, nutmeg, cinnamon, cloves, allspice, and ginger in a large bowl.
  3. Combine the eggs, vanilla, pumpkin puree, milk, and oil in a separate bowl.
  4. Pour the wet mixture into the dry ingredients and mix until just combined.
  5. Pour the batter into your prepared loaf pan.
  6. Bake for 60-70 minutes or until a toothpick comes out clean.
  7. Cool in the pan for 10 minutes before transferring to a wire rack.
  8. Slice and enjoy!

Notes

You can substitute any ingredients as needed for dietary preferences. For a vegan version, use flax eggs and plant-based milk.
