Raspberry Mousse

A light and airy raspberry mousse dessert that melts in your mouth, perfect for special occasions or as a sweet reward.

Ingredients

  • 2 cups fresh raspberries
  • ½ cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 2 tablespoons gelatin powder
  • ¼ cup cold water
  • Mint leaves for garnish (optional)

Instructions

  1. Prepare the gelatin by mixing the gelatin powder with cold water in a small bowl and letting it sit for 5-10 minutes.
  2. Blend the raspberries, sugar, and lemon juice in a blender until smooth.
  3. Heat the bloomed gelatin in the microwave for 15-20 seconds until dissolved.
  4. Whip the heavy cream with vanilla extract until soft peaks form.
  5. Combine the raspberry mixture with the whipped cream by gently folding them together.
  6. Chill the mousse in serving dishes in the refrigerator for at least 2 hours.
  7. Serve the mousse topped with remaining raspberries and a mint leaf.

Notes

For an elegant presentation, use glass dessert cups and top with a dollop of whipped cream. The mousse can be made a day in advance for best results.
