  • 4 ripe nectarines, pitted and chopped
  • 12 habanero peppers, finely chopped
  • 1 cup sugar
  • 1 lemon, juiced
  • 1/4 cup water
  • 1/2 teaspoon salt

Instructions

  1. Prep your ingredients: Gather your nectarines and wash them. Pitting and chopping them into small pieces should be the first order of business.
  2. Chop the habaneros: Use a sharp knife to finely chop your habaneros. Pro tip: wear gloves if you prefer to keep your hands away from the oils!
  3. Combine in a pot: In a medium saucepan, combine chopped nectarines, habanero peppers, sugar, lemon juice, water, and salt.
  4. Cook it down: Place the saucepan over medium heat and bring this mixture to a gentle boil. Stir to prevent sticking.
  5. Check consistency: Test the jam with a cold plate method to see if it holds its shape.
  6. Jar it up: Pour the jam into clean, sterilized jars, leaving a little headspace at the top.
