  • 4 bone-in, skin-on chicken drumsticks
  • 4 tablespoons olive oil
  • 3 tablespoons fresh lime juice
  • 6 garlic cloves, minced
  • 1 tablespoon ground cumin
  • 1 tablespoon smoked paprika
  • 2 teaspoons oregano
  • 2 teaspoons kosher salt
  • 1 teaspoon ground black pepper
  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 cup fresh cilantro (packed)
  • 1/4 cup fresh parsley
  • 2 jalapeños (seeds removed for less heat)
  • 2 garlic cloves
  • 1 tablespoon fresh lime juice
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt

Instructions

  1. Prepare the Marinade: In a large bowl, combine the olive oil, lime juice, minced garlic, cumin, smoked paprika, oregano, kosher salt, and black pepper. Mix it all together until it’s well-blended.
  2. Marinate the Chicken: Add the chicken thighs and drumsticks to the marinade. Use your hands to rub that marinade all over the chicken. Cover and let it marinate in the fridge for at least 2 hours.
  3. Make the Creamy Green Sauce: In a food processor, combine mayonnaise, sour cream, cilantro, parsley, jalapeños, garlic, lime juice, olive oil, and salt. Pulse until smooth and creamy.
  4. Preheat the Grill: Preheat your grill to medium-high heat for about 30 minutes before cooking.
  5. Grill the Chicken: Place the marinated chicken skin-side down on the grate. Grill for about 6-8 minutes per side, or until the internal temperature reaches 165°F (75°C).
  6. Check for Doneness: Always check the chicken with a meat thermometer and let it rest for a few minutes after grilling.
