Delicious Blueberry Crumble Bars

Sweet and easy Blueberry Crumble Bars that bring back warm summer memories with every bite.

Ingredients

  • 2 cups blueberries
  • 2 teaspoons cornstarch
  • 1 tablespoon lemon zest
  • 1 tablespoon lemon juice (freshly squeezed)
  • 1/4 cup granulated sugar
  • 1 and 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter (cold, cut into cubes)
  • 1 large egg yolk
  • 1 tablespoon packed brown sugar
  • 1 tablespoon granulated sugar
  • 1 tablespoon all-purpose flour

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8-inch square baking dish with parchment paper.
  2. Toss together the blueberries, lemon zest, lemon juice, sugar, and cornstarch in a medium bowl. Let sit.
  3. Combine 1 and 1/2 cups flour, 1/2 cup sugar, baking powder, and salt in a large bowl. Add cold butter and mix until coarse crumbs form.
  4. Add the egg yolk and fold gently. Reserve 1 cup for topping.
  5. Press the remaining mixture into the baking dish, pour the blueberry filling over it, and sprinkle with reserved crumble on top.
  6. Bake for 30-35 minutes until golden brown. Let cool for 10-15 minutes before serving.

Notes

Serve with vanilla ice cream or a warm glaze. Great for freezing!
