Easy Broccoli Cheddar Soup

A creamy, comforting broccoli cheddar soup that’s easy to make and packed with flavor.

  • 1 tablespoon olive oil
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 4 cups broccoli florets
  • 4 cups vegetable broth
  • 1 cup shredded carrots
  • 1 cup shredded sharp cheddar cheese
  • 1 cup milk (or cream for a richer soup)
  • Salt and pepper to taste
  • Optional: crushed red pepper flakes

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Sauté the chopped onion for 4-5 minutes until translucent, then add the garlic for another minute.
  3. Add the broccoli florets and shredded carrots; cook for 2-3 minutes, tossing to coat.
  4. Pour in the vegetable broth and bring to a gentle boil; then simmer for 10-15 minutes until the broccoli is tender.
  5. Blend the soup until smooth or leave it chunky, as desired.
  6. Add the milk (or cream) and shredded cheese, stirring until melted and creamy.
  7. Season with salt, pepper, and optional crushed red pepper flakes before serving.

Notes

For variations, add protein like chicken or turkey, swap in other veggies, or make it vegan by using plant-based milk and cheese.
