Cowboy Butter Chicken Pasta

A delicious and creamy pasta dish featuring tender chicken cooked in a luscious butter and garlic sauce, blended with Parmesan and Italian seasoning.

Ingredients

Scale
  • 12 ounces pasta of your choice (e.g., penne or fettuccine)
  • 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 medium onion, diced
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1 cup grated Parmesan cheese
  • 1 tablespoon Italian seasoning
  • 1 teaspoon red pepper flakes
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil. Add your pasta and cook until al dente, reserving about a cup of pasta water before draining.
  2. Sauté the chicken: In a large skillet, melt 2 tablespoons of butter over medium heat and add chicken pieces, cooking until golden brown, about 5-7 minutes. Set aside.
  3. Prepare the sauce: In the same skillet, add the remaining butter, onion, and garlic, sautéing until the onion is translucent.
  4. Add the cream and broth: Stir in heavy cream and chicken broth, bringing to a gentle simmer until slightly thickened.
  5. Season it up: Add Italian seasoning, red pepper flakes, salt, and pepper, adjusting to taste.
  6. Combine everything: Return the chicken to the skillet, then stir in the grated Parmesan cheese until melted.
  7. Toss the pasta: Add the drained pasta, tossing to coat in the sauce. Add reserved pasta water as needed for creaminess.
  8. Garnish and serve: Plate and garnish with fresh parsley before serving.
