  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup sugar
  • 2 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups chopped apples (peeled and cored)
  • 1 cup caramel sauce
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 325°F (162°C).
  2. In a large mixing bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until well combined and crumbly.
  3. Grease an 8×8-inch baking dish and pour the crust mixture into it, pressing it down evenly.
  4. Bake the crust for about 10 minutes, or until lightly golden.
  5. While the crust is baking, beat the softened cream cheese in a mixing bowl until smooth.
  6. Gradually add the sugar, mixing until combined.
  7. Add the eggs one at a time, mixing well after each addition, then the vanilla extract.
  8. Fold in the chopped apples and cinnamon gently.
  9. Pour the cream cheese mixture over the baked crust, spreading it evenly.
  10. Return the dish to the oven and bake for 30–35 minutes, or until the edges are set.
  11. Allow the bars to cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours.
  12. Drizzle caramel sauce over the top before serving.

Notes

For a gluten-free option, substitute with gluten-free graham crackers or oats. Store leftovers in an airtight container for up to 5 days.
