Carne Guisada

A comforting and flavorful dish featuring tender chunks of beef simmered in a rich sauce, perfect for cozy evenings.

  • 2 pounds beef stew meat, cut into cubes
  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 tomatoes, chopped
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Brown the beef by heating vegetable oil in a large pot over medium-high heat, then add beef cubes in batches and brown on all sides for about 5-7 minutes. Remove and set aside.
  2. Sauté the chopped onion in the same pot for about 3-4 minutes until translucent. Then add minced garlic and chopped bell pepper, cooking for another 2-3 minutes.
  3. Add chopped tomatoes and stir everything together, cooking for about 5 minutes.
  4. Return the browned beef to the pot, pour in the beef broth, and add tomato paste, chili powder, cumin, salt, and pepper. Stir until well combined.
  5. Bring to a gentle boil, then reduce heat to low, cover, and let simmer for about 90-120 minutes.
  6. Finish by sprinkling fresh cilantro on top before serving.

Notes

Serve over rice or with warm tortillas. Ideal for meal prep as flavors improve over time.
