Cheesy Broccoli Chicken and Rice Casserole

A warm and comforting casserole combining chicken, broccoli, and cheese, perfect for busy weeknights.

  • 2 cups cooked chicken (shredded or cubed)
  • 3 cups cooked rice (white or brown)
  • 2 cups broccoli florets (fresh or frozen, lightly steamed)
  • 1 can (10.5 oz / ~300 g) cream of chicken soup
  • 1/2 cup sour cream (or plain Greek yogurt)
  • 1/2 cup milk
  • 1 1/2 cups shredded cheddar cheese (divided)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper
  • 1/2 cup breadcrumbs (optional, for topping)
  • 2 tablespoons butter (melted, optional, for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix in a large mixing bowl the cooked chicken, cooked rice, broccoli, cream of chicken soup, sour cream, and milk.
  3. Season with garlic powder, onion powder, paprika, salt, and pepper, tasting as you go.
  4. Stir in 1 cup of shredded cheddar cheese.
  5. Transfer the mixture into a greased 9×13-inch baking dish.
  6. Top with breadcrumbs mixed with melted butter, then sprinkle the remaining cheese on top.
  7. Bake for about 25-30 minutes, or until bubbly and golden brown.
  8. Cool for 10 minutes before serving.

Notes

Serve with a crisp, green salad or some whole-grain bread for a complete meal. Garnish with parsley or extra cheese if desired.
