  • 6 large eggs
  • 1 cup shredded cheese (cheddar or choice)

  • Salt and pepper to taste
  • Cooking spray or muffin liners

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the muffin tin with cooking spray or liners.
  3. Mix the cottage cheese and eggs in a bowl until smooth.
  4. Fold in the shredded cheese and diced vegetables.
  5. Season with salt and pepper to taste.
  6. Fill the muffin tin with the mixture, filling each about 3/4 full.
  7. Bake for 20-25 minutes until golden and firm.
