  • 1 cup shredded cheddar cheese
  • 1/2 cup diced ham or bacon (optional)

  • Chopped green onions for garnish (optional)

Instructions

  1. Prep your ingredients: Wash and dice your potatoes into small, bite-size pieces.
  2. Heat the pan: In a large skillet, heat the olive oil over medium heat.
  3. Cook the potatoes: Toss in the diced potatoes, add salt and pepper, and fry for about 8-10 minutes until golden and crispy.
  4. Add the ham or bacon (if using) and cook for a couple of minutes.
  5. Whisk the eggs: Crack the eggs into a bowl and whisk until mixed.
  6. Combine everything: Create a well in the skillet and pour in the whisked eggs.
  7. Scramble it together: Gently stir as the eggs set, mixing them with the potatoes and meat.
  8. Add the cheese: Sprinkle shredded cheddar cheese over the top and allow it to melt.
  9. Plate it up: Serve hot with green onions on top.
