Cheesy Taco Rice Skillet

A comforting one-pan dish that combines the flavors of tacos with cheesy rice, perfect for busy weeknights.

Ingredients

  • 1 lb lean ground beef
  • 1 can black beans or pinto beans (drained and rinsed)
  • 1 cup corn (frozen or canned)
  • 2 cups ready rice (microwaveable or precooked)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 packet taco seasoning
  • Salt and pepper to taste
  • Optional toppings: diced tomatoes, sour cream, avocado, cilantro

Instructions

  1. Brown the ground beef in a large skillet over medium heat for about 5-7 minutes. Drain excess fat and season with salt and pepper.
  2. Mix in the drained beans and corn and heat through for 2-3 minutes.
  3. Add the ready rice and taco seasoning, mixing thoroughly until well combined.
  4. Sprinkle the shredded cheese over the top and cover for 2-3 minutes until melted.
  5. Plate and serve with your favorite toppings.
