Chewy Pumpkin Cookies

Soft, spiced pumpkin cookies that bring cozy autumn vibes to your kitchen.

  • 1 cup pumpkin puree
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the softened butter, brown sugar, and granulated sugar until smooth. Add the pumpkin puree and egg, stirring until combined.
  3. Combine the all-purpose flour, baking soda, cinnamon, nutmeg, ginger, and salt in another bowl.
  4. Blend the dry ingredients into the wet mixture gradually until no dry flour spots remain.
  5. Scoop heaping tablespoons of dough onto ungreased baking sheets, spacing them about 2 inches apart.
  6. Bake for 10-12 minutes until set and slightly golden at the edges.
  7. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For variations, try adding chocolate chips, nuts, or dried cranberries. Store in an airtight container for up to a week.
