Chicken Marsala Pasta

A delicious blend of succulent chicken, earthy mushrooms, and rich Marsala wine, perfect for a weeknight dinner.

  • 8 oz. pasta (fettuccine or penne)
  • 2 tablespoons olive oil
  • 1 lb. boneless, skinless chicken breasts, sliced
  • 1 cup mushrooms, sliced (preferably cremini or button)
  • 2 cloves garlic, minced
  • 1/2 cup Marsala wine
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Grated Parmesan cheese (optional, for serving)

Instructions

  1. Cook the pasta in a large pot of salted boiling water until al dente. Reserve a cup of pasta water, then drain and set aside.
  2. Sauté the chicken in olive oil over medium-high heat, seasoning with salt and pepper, for about 5-6 minutes until golden brown. Remove and set aside.
  3. Cook the mushrooms in the same skillet for 3-4 minutes until golden, then add the garlic and sauté for another minute.
  4. Add the Marsala wine and simmer for 2-3 minutes to deepen flavors.
  5. Incorporate the chicken broth and heavy cream, stirring and simmering for another 5 minutes until the sauce thickens.
  6. Season the sauce with Italian seasoning, then return the chicken to the skillet and simmer for an additional minute.
  7. Toss in the drained pasta, mixing well to coat with the sauce, adding reserved pasta water if necessary.
  8. Serve the Chicken Marsala Pasta garnished with parsley and optional Parmesan cheese. Enjoy!

Notes

For a vegetarian option, substitute chicken with tofu or chickpeas. You can also add vegetables like spinach or cherry tomatoes for added nutrition.
