Cozy Chicken & Wild Rice Soup

A comforting Chicken & Wild Rice Soup that combines heartiness with wholesome ingredients, perfect for colder months.

  • 1 lb Chicken Breast
  • 1 cup Wild Rice
  • 2 Carrots, Diced
  • 2 Celery Stalks, Diced
  • 1 medium Onion, Diced
  • 4 cups Chicken Broth
  • 1 cup Heavy Cream
  • 2 tbsp Olive Oil
  • Salt and Pepper to taste

Instructions

  1. Sauté the aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add diced onions, carrots, and celery. Sauté for 5-7 minutes until soft.
  2. Cook the chicken: Add chicken breasts and a cup of chicken broth. Simmer gently, covered, for 15-20 minutes until cooked through.
  3. Add the wild rice: Remove chicken, shred it, and set aside. Add wild rice and remaining broth to the pot. Simmer for 30-35 minutes until softened.
  4. Combine everything: Return shredded chicken, stir, and add heavy cream. Simmer for another 5-10 minutes to warm through.
  5. Serve: Ladle into bowls, garnish with parsley or olive oil, and add a squeeze of lemon before serving.

Notes

For a dairy-free version, substitute heavy cream with coconut milk. You can also freeze the soup without the cream.
