Ingredients

Scale
  • 1 lb flank steak (or skirt steak, or other cuts)
  • 1 tablespoon soy sauce
  • 1 tablespoon peanut oil (or vegetable oil)
  • 1 tablespoon cornstarch
  • 1/2 teaspoon baking soda (optional)
  • 1/2 cup chicken stock (or beef stock)
  • 2 tablespoons Shaoxing wine (or dry sherry)
  • 2 tablespoons soy sauce (additionally)
  • 1 teaspoon dark soy sauce
  • 2 teaspoons brown sugar (or white sugar)
  • 1 tablespoon cornstarch (for sauces)
  • 1 head of broccoli, cut to bite-sized florets
  • 1 tablespoon peanut oil (or vegetable oil for stir-frying)
  • 3 garlic cloves, minced
  • 2 teaspoons ginger, minced

Instructions

  1. Marinate the beef by slicing it against the grain into thin strips and mixing with soy sauce, cornstarch, and baking soda in a bowl for 15-20 minutes.
  2. Prepare the sauce by whisking together chicken stock, Shaoxing wine, additional soy sauce, dark soy sauce, and brown sugar in a separate bowl.
  3. Heat a tablespoon of peanut oil in a wok or skillet over medium-high heat, then add the broccoli and stir-fry for 2-3 minutes, then remove and set aside.
  4. Sauté the marinated beef in the same pan until browned, about 2-3 minutes, then add garlic and ginger and stir for 30 seconds.
  5. Pour in the sauce mixture, stirring until it begins to thicken.
  6. Combine the broccoli back into the pan with the sauce for another minute, stirring to combine.
  7. Serve hot over rice or noodles with sauce drizzled on top.

Notes
