Citrus and Herb Chicken Breast

A delightful and healthy chicken dish infused with zesty citrus and aromatic herbs, perfect for family gatherings.

  • ⅓ cup Olive Oil
  • 2 tbsp Orange Juice
  • 1 tbsp Lemon Juice
  • 1 tsp Local Honey (optional)
  • 1 Shallot (finely diced)
  • 4 Cloves Minced Garlic
  • ½ tbsp Dried Oregano
  • ½ tsp Salt
  • ½ tsp Pepper
  • ¾ tsp Paprika
  • 2 Oranges (for zest and garnishing)
  • 1 Lemon
  • 3 Sprigs Fresh Rosemary
  • 4 Sprigs Fresh Thyme
  • 1 Red Onion (for roasting)

Instructions

  1. Preheat the Oven: Begin by preheating your oven to 400°F (200°C).
  2. Prep the Marinade: In a medium-sized bowl, whisk together olive oil, orange juice, lemon juice, honey, shallots, minced garlic, oregano, salt, pepper, and paprika until well combined.
  3. Marinate the Chicken: Place the chicken breasts in a large resealable bag or glass dish and pour the marinade over the chicken. Let it marinate in the refrigerator for at least 30 minutes.
  4. Prep the Roasting Pan: Slice the oranges and lemon into thick rounds. Arrange them on a large baking sheet or roasting pan. Add rosemary and thyme.
  5. Add the Chicken: Place the marinated chicken on top of the citrus slices and drizzle any remaining marinade over it.
  6. Prepare the Red Onion: Chop the red onion into wedges and scatter them around the chicken on the baking sheet.
  7. Roast Away: Bake in the preheated oven for about 25-30 minutes until the chicken is fully cooked (internal temperature should reach 165°F or 75°C).
  8. Broil for Extra Crispiness: Switch the oven to broil for the last 2-3 minutes for a golden-brown finish.
  9. Let It Rest: Once out of the oven, let the chicken rest for about 5 minutes.
  10. Plate and Serve: Serve the chicken over the roasted citrus and onions, garnished with fresh herbs if desired.

Notes

For a spicy kick, add red pepper flakes to the marinade. Try using fresh basil or cilantro instead of rosemary and thyme for a twist.
