  • 1/2 cup brown sugar
  • 1 cup pumpkin puree
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Lightly grease a loaf pan or line it with parchment paper.
  2. Mix the dry ingredients: In a large bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and cloves.
  3. Mix the wet ingredients: In another bowl, combine the granulated sugar, brown sugar, pumpkin puree, vegetable oil, eggs, and vanilla extract. Mix until smooth.
  4. Combine: Slowly pour the wet mixture into the dry ingredients and fold gently with a spatula. Be careful not to overmix.
  5. Add the nuts (if using): Fold in the chopped nuts if you’re using them.
  6. Pour the batter into the pan: Transfer the batter into the prepared loaf pan, smoothing the top with a spatula.
  7. Bake: Bake for about 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool and serve: Let it cool in the pan for 10 minutes before transferring it to a wire rack.

Notes

For a vegan version, substitute the eggs with 1/2 cup of unsweetened applesauce. Store leftover pumpkin bread covered at room temperature for 2-3 days or freeze for up to 3 months.
