Marbled Pumpkin Cheesecake Bars

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup pumpkin puree
  • 1 teaspoon pumpkin spice
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine graham cracker crumbs, 1/4 cup of sugar, and melted butter in a medium bowl.
  3. Press the mixture into the bottom of a 9×13-inch baking dish.
  4. Bake the crust for about 10 minutes.
  5. Beat softened cream cheese in a large bowl until creamy and smooth.
  6. Add in the cup of sugar and vanilla extract, blending until combined.
  7. Incorporate the eggs one at a time, mixing just until combined.
  8. Divide the filling in half and set aside 1 ½ cups for the classic layer.
  9. Add pumpkin puree, pumpkin spice, and cinnamon to the remaining mixture, stirring until well combined.
  10. Pour the pumpkin cheesecake mixture over the cooled crust.
  11. Dollop the reserved plain cheesecake mixture on top and swirl together.
  12. Bake for 30-35 minutes until the edges are set but the center has a slight jiggle.
  13. Cool at room temperature, then chill in the fridge for at least 4 hours.
  14. Slice into squares and serve.

Notes

Dust with powdered sugar before serving for an elegant touch. These bars can be made a day ahead and taste even better the next day.
