Creamy & Cozy Butternut Squash Soup

A comforting bowl of butternut squash soup with a rich, velvety texture and delicious flavors, perfect for cool autumn days.

  • 1 medium Butternut Squash, peeled and diced
  • 1 Onion, chopped
  • 4 cups Vegetable or Chicken Broth
  • 1/2 cup Heavy Cream
  • 2 tablespoons Olive Oil or Butter
  • 1 tablespoon Fresh Sage, chopped
  • Salt and Pepper to taste

Instructions

  1. Prep the squash: Start by peeling and chopping the butternut squash into uniform cubes—about 1-inch pieces will do.
  2. Sauté onions: In a large pot, heat a tablespoon of olive oil or butter over medium heat. Toss in your chopped onion and sauté for about 5 minutes, or until they become translucent.
  3. Add the squash: Once your onions are fragrant and tender, throw in the butternut squash cubes and give everything a good stir.
  4. Pour in the broth: Next up, pour in about 4 cups of your broth of choice. Bring this mixture to a gentle boil, then reduce the heat and let it simmer for 15-20 minutes, or until the squash is fork-tender.
  5. Blend to perfection: Blend the soup until smooth and creamy, adding in the cream as you blend.
  6. Season it up: After blending, return the soup to the pot, and add chopped fresh sage, salt, and pepper. Simmer for another 5 minutes.
  7. Plate and serve: Ladle your creamy soup into bowls and serve with a swirl of cream on top or crispy croutons.

Notes

This soup freezes beautifully. You can substitute coconut milk for a dairy-free version.
