A comforting and creamy rice dish loaded with cheesy goodness, perfect for weeknight dinners or special occasions.

  • 1 ½ cups (360 ml) shredded cheese (cheddar, mozzarella, or a mixture)
  • 2 cups (470 ml) cooked rice (white, brown, or basmati)
  • 2 tbsps (30 ml) unsalted butter
  • ½ cup (120 ml) milk (whole or 2%)
  • ¼ cup (60 ml) chicken or vegetable broth (optional)
  • ¼ cup (40 g) diced onion
  • 1 clove garlic, minced
  • ¼ tsp salt (adjust to taste)
  • ¼ tsp black pepper
  • ¼ tsp smoked paprika (optional)
  • Fresh parsley, chopped (for garnish)
  • Green onions, sliced (for garnish)
  • Optional: Crumbled bacon (for garnish)

Instructions

  1. Prep the rice: If you’re using uncooked rice, get that boiling!
  2. Sauté the aromatics: In a large skillet, melt the butter over medium heat. Add the diced onion and sauté until translucent—about 3-4 minutes. Add the minced garlic and cook for an additional minute.
  3. Combine ingredients: Stir in the cooked rice and mix to coat it with butter.
  4. Make it creamy: Add the milk (and broth if using) to the rice mixture. Stir until well combined.
  5. Cheesy goodness: Stir in the shredded cheese until melted and creamy.
  6. Season it up: Add the salt, pepper, and smoked paprika (if using). Adjust seasoning to taste.
  7. Make it fancy: Transfer to a serving dish and garnish with fresh parsley, green onions, and crumbled bacon if desired.
