Creamy Chicken Orzo

A delicious comfort dish combining succulent chicken, tender orzo, and vibrant spinach in a luxuriously creamy sauce.

  • 1 lb boneless, skinless chicken breast
  • 1 cup orzo pasta
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients by dicing the chicken, washing the spinach, and grating the Parmesan.
  2. Heat a drizzle of olive oil in a large skillet over medium heat. Add the diced chicken and season with salt and pepper. Cook until golden brown, about 5-7 minutes.
  3. Bring a pot of salted water to a boil and add the orzo. Cook according to package instructions until al dente, then drain.
  4. Add the fresh spinach to the skillet with the chicken and stir until wilted, about 2 minutes.
  5. Lower the heat and add chicken broth, heavy cream, and grated Parmesan. Stir until the cheese melts and forms a creamy sauce.
  6. Fold in the cooked orzo, stirring to coat all pieces with the sauce.
  7. Remove from heat, transfer to a serving platter, and garnish with additional Parmesan and herbs.

Notes

For variations, consider adding lemon zest, sautéed mushrooms, or red pepper flakes to enhance flavor.
