Creamy Chicken Soup

Ingredients

  • 2 cups chicken (boneless, skinless breasts or thighs)
  • 1 cup vegetables (carrots, celery, and onion)
  • 46 cups chicken broth (homemade or store-bought)
  • 1 cup heavy cream (or half-and-half)
  • Salt and pepper to taste
  • 1 teaspoon seasonings (thyme, parsley, or dill)
  • Optional: 1 cup corn or peas

Instructions

  1. Prep your ingredients by dicing your veggies: about a cup each of carrots, celery, and onion.
  2. Sauté the vegetables in a large pot with olive oil over medium heat for about 5-7 minutes until the onions become translucent.
  3. Add the chicken, season with salt and pepper, and stir to combine with the veggies.
  4. Pour in enough chicken broth to cover the mixture and let it simmer for about 20 minutes until the chicken is cooked through.
  5. Shred the cooked chicken using two forks and return it to the pot.
  6. Create the creamy base by slowly stirring in the heavy cream and simmering for another 10 minutes.
  7. Season to perfection by tasting and adjusting the seasoning.
  8. Serve hot, garnished with freshly chopped herbs.
