Sweet Corn and Buttery Rice

A comforting dish combining sweet corn and buttery rice, perfect for busy weekdays and family gatherings.

Ingredients

  • 1 cup long-grain white rice
  • 2 cups water or broth
  • 1 can sweet corn (drained)
  • 2 tablespoons butter
  • 2 cloves garlic (minced)
  • Salt and pepper to taste
  • Optional: chopped parsley for garnish

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. Boil 2 cups of water (or broth) in a medium pot, adding salt if desired.
  3. Cook the rinsed rice in the boiling liquid, cover, and simmer for 18-20 minutes.
  4. Melt the butter in a skillet over medium heat and sauté the garlic until fragrant.
  5. Add the drained corn to the skillet and stir to coat, cooking until slightly caramelized.
  6. Combine the corn mixture with the cooked rice, season with salt and pepper, and mix gently.
  7. Garnish with chopped parsley if using and serve warm.

Notes

Feel free to experiment by adding spices or other herbs for different flavor profiles.
