  • 2 15.5-oz cans Fiesta Corn, well drained
  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 2 cups shredded cheese (cheddar and Monterey Jack)
  • 1 cup diced red onion
  • 1/2 cup chopped cilantro

Instructions

  1. Start by gathering all your ingredients and tools.
  2. Open the cans of fiesta corn and pour them into a sieve to drain.
  3. In the large mixing bowl, combine the sour cream and mayonnaise.
  4. Add the cumin, garlic powder, and salt to the creamy mixture.
  5. Fold in the well-drained fiesta corn.
  6. Toss in the shredded cheese and diced red onion.
  7. Add in the chopped cilantro.
  8. Grab a tortilla chip for a taste test and adjust seasonings.
  9. Cover the bowl with plastic wrap and refrigerate for about 30 minutes.
