Creamy Cowboy Butter Chicken Pasta

A creamy, comforting pasta dish filled with flavor and packed with protein, perfect for busy days.

  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 8 oz fettuccine or penne pasta
  • 3 tbsp unsalted butter
  • 1 cup heavy cream
  • 4 cloves fresh garlic, minced
  • 2 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add your pasta and cook it according to package instructions until al dente. Remember to reserve about 1 cup of pasta water before draining.
  2. Prepare the Chicken: While the pasta is cooking, season your chicken breasts generously with salt, pepper, and 1 tablespoon of Italian seasoning. Heat a large skillet over medium-high heat, melt 1 tablespoon of butter, and add the chicken breasts. Cook for about 6-7 minutes on each side until golden brown and cooked through. Remove from the pan and let rest.
  3. Make the Sauce: In the same skillet, lower the heat to medium, add the remaining butter, and toss in the minced garlic. Sauté for about 30 seconds until fragrant. Then, pour in the heavy cream, stir, and let it simmer gently for another 2 minutes.
  4. Combine Everything: Slice the cooked chicken and add it back to the skillet along with the cooked pasta. Mix until the pasta is coated in the cream sauce. If too thick, gradually add reserved pasta water to achieve desired creaminess.
  5. Season and Serve: Add the remaining Italian seasoning and mix. Adjust seasoning with more salt and pepper as needed.

Notes

Toss in some sautéed vegetables or red pepper flakes for variations. Cooking should be fun and flexible!
