Crack Chicken Casserole

A creamy and flavorful casserole with tender chicken, crispy bacon, and loads of cheese – the ultimate comfort food.

  • 2 cups cooked chicken, shredded
  • 8 ounces pasta (such as rotini or penne)
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup cooked bacon, crumbled
  • 1 cup chicken broth
  • 1 packet ranch seasoning mix
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the pasta according to package instructions until al dente. Drain and set aside.
  3. Mix the shredded chicken, softened cream cheese, cooked bacon, chicken broth, and ranch seasoning in a mixing bowl.
  4. Add the drained pasta and half of the shredded cheddar cheese, and fold everything together.
  5. Transfer the mixture into a greased 9×13-inch baking dish.
  6. Top with the remaining cheddar cheese.
  7. Bake for 20-25 minutes, or until the cheese is bubbling and golden.
  8. Garnish with chopped green onions before serving.

Notes

For a lighter version, substitute cream cheese with Greek yogurt. You can also use cauliflower rice for a low-carb alternative.
