Creamy Garlic Chicken Potatoes

  • 4 boneless skinless chicken breasts
  • Salt (to taste)
  • Black pepper (to taste)
  • 2 teaspoons garlic powder (divided)
  • 4 cloves garlic (minced)
  • 3 tablespoons olive oil (divided)
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Italian seasoning
  • 1 tablespoon fresh parsley (chopped, optional)
  • 1.5 pounds baby potatoes (halved)
  • 1 teaspoon dried rosemary or thyme

Instructions

  1. Season the chicken breasts generously with salt, pepper, and 1 teaspoon of garlic powder. Marinate for at least 15 minutes.
  2. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat; add the chicken and cook for 5-7 minutes on each side until golden brown. Transfer to a plate and cover.
  3. Reduce heat to medium; add 1 tablespoon of olive oil and sauté minced garlic and remaining garlic powder for 30 seconds.
  4. Pour in the chicken broth, add heavy cream, Parmesan cheese, Dijon mustard, Italian seasoning, and dried rosemary or thyme; stir and let simmer for 5 minutes.
  5. Boil baby potatoes in salted water until fork-tender (10-12 minutes), then drain and add to the sauce.
  6. Add the chicken back into the skillet, spoon some sauce over the top, and let simmer for an additional 5 minutes.
