Easy and Elegant Goat Cheese Orzo

A simple yet sophisticated Goat Cheese Orzo that balances rich flavors with wholesome ingredients.

  • 400 g Orzo
  • 150 g Soft Goat Cheese
  • ½ Cup Sundried Tomatoes Packed in Oil (Drained and Chopped)
  • 2 Tablespoons Unsalted Butter
  • ½ Cup Onion (Finely Chopped)
  • 2 Cloves Garlic (Finely Chopped)
  • 1 Litre Low Sodium Chicken Stock (about 4½ cups)
  • Fresh Parsley to Serve
  • Salt and Pepper to Taste

Instructions

  1. Cook the Orzo: Bring a large pot of salted water to a boil. Once boiling, add the orzo and cook according to the package instructions, about 8-10 minutes. Stir occasionally.
  2. Prepare the Flavor Base: In a large skillet over medium heat, melt the unsalted butter. Add the onions and sauté until translucent, around 3-4 minutes.
  3. Add Garlic and Sundried Tomatoes: Incorporate the minced garlic and sauté for another minute. Then, toss in the chopped sundried tomatoes and mix for another minute.
  4. Combine Orzo and Broth: Drain the orzo (reserving a little pasta water) and add it to the skillet. Pour in the warm chicken stock and stir gently.
  5. Add the Goat Cheese: Crumble the goat cheese into the orzo and stir until well incorporated.
  6. Garnish and Serve: Sprinkle fresh parsley on top and serve immediately in bowls.
