Creamy Mushroom Chicken Meatballs

Tender chicken meatballs smothered in a rich and velvety creamy mushroom sauce, perfect for busy weeknights.

  • 1 lb ground chicken
  • 1 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 8 oz mushrooms, sliced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 tsp dried thyme
  • Fresh parsley for garnish

Instructions

  1. Make the meatball mixture by combining ground chicken, breadcrumbs, grated Parmesan, egg, minced garlic, onion powder, salt, and pepper in a bowl.
  2. Shape the mixture into meatballs, about 1 to 1.5 inches in diameter.
  3. Brown the meatballs in a skillet with olive oil for 6-8 minutes until golden brown.
  4. Prepare the creamy mushroom sauce by sautéing mushrooms in the skillet, adding heavy cream and chicken broth.
  5. Simmer the meatballs in the sauce for about 10 minutes.
  6. Garnish with fresh parsley and serve.

Notes

You can substitute ground chicken with turkey or pork. Additional variations include mixing in fresh herbs or making the sauce spicier.
