Creamy Mushroom Soup

A rich and comforting creamy mushroom soup that brings nostalgia and warmth with every spoonful.

Ingredients

  • 2 cups mixed cremini and button mushrooms, sliced
  • 1 medium onion, diced
  • 1 cup heavy cream (or half-and-half, or coconut cream)
  • 2 teaspoons fresh thyme (or 1 teaspoon dried thyme)
  • 4 cups vegetable or chicken stock
  • 1 tablespoon olive oil or butter
  • Salt and pepper to taste

Instructions

  1. Prep your ingredients: Clean and slice mushrooms and dice the onion.
  2. Sautéing the aromatics: In a large pot, heat olive oil or butter over medium heat. Add onion and sauté until translucent.
  3. Add the sliced mushrooms and sauté for an additional 5-7 minutes until they release their juices.
  4. Pour in the stock and bring to a gentle simmer for about 15-20 minutes.
  5. Stir in the cream and heat through for about 5 minutes.
  6. Season to taste with thyme, salt, and pepper.
  7. Blend it (optional): Use an immersion blender for a smoother texture, or leave some chunks for a rustic feel.

Notes

For a vegan version, use coconut milk instead of cream and olive oil instead of butter.
