Spinach Mushroom Pasta

A simple and satisfying pasta dish featuring fresh spinach and savory mushrooms. Perfect for a quick yet nourishing meal.

Ingredients

  • Pasta (any type: whole wheat, chickpea, or gluten-free)
  • Fresh sliced mushrooms (cremini or button recommended)
  • Fresh baby spinach
  • Grated or shaved parmesan cheese (or nutritional yeast for a vegan option)
  • Olive oil
  • Minced garlic
  • Salt

Instructions

  1. Cook the pasta in a large pot of salted boiling water until al dente, about 8-10 minutes. Reserve a cup of pasta water, then drain.
  2. Sauté the mushrooms in a large skillet with olive oil over medium heat for 5-7 minutes until browned.
  3. Add minced garlic to the skillet and sauté for 30 seconds before folding in the spinach. Cook until wilted, about 2-3 minutes.
  4. Combine the drained pasta with the vegetables, adding reserved pasta water as needed to achieve a creamy texture.
  5. Add the parmesan cheese and mix until melted and well combined.

Notes

Serve with extra parmesan, a drizzle of olive oil, and red pepper flakes for an extra kick. Can be paired with a salad or garlic bread.
