Creamy Roasted Apple Pumpkin Soup

A cozy fall favorite combining the warm flavors of roasted pumpkin and sweet apples, perfect for chilly evenings.

  • 2 cups pumpkin puree (homemade or canned)
  • 2 medium apples, peeled and sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon allspice
  • 1 teaspoon smoked paprika
  • 4 cups vegetable or chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh herbs (like thyme or sage) for garnish

Instructions

  1. Preheat your oven to 400°F (about 200°C).
  2. Prepare the sliced apples and chopped onion by tossing them with olive oil, salt, and pepper on a baking sheet.
  3. Roast in the oven for about 20–25 minutes until golden brown.
  4. Sauté the minced garlic in a large pot with olive oil for 1 minute until fragrant.
  5. Combine the roasted apples and onions into the pot with garlic, and stir in the pumpkin puree and spices.
  6. Add the broth, stir, and simmer for 10 minutes.
  7. Cream it up by stirring in the heavy cream and Parmesan cheese until smooth.
  8. Blend the mixture until smooth using an immersion blender or in batches, leaving some texture if desired.
  9. Taste and adjust seasoning as needed.
  10. Serve in bowls garnished with fresh herbs.
