Creamy Salmon Pasta

A quick and satisfying creamy pasta dish featuring rich salmon, fresh spinach, and a velvety cream sauce.

  • 2 Salmon Fillets
  • 8 oz Pasta (Fettuccine or Linguine)
  • 2 cups Fresh Spinach
  • 1 cup Heavy Cream
  • 2 cloves Garlic, minced
  • 1 tablespoon Olive Oil
  • Salt and Pepper to taste
  • Grated Parmesan Cheese (for serving)
  • Fresh Parsley (for garnish)

Instructions

  1. Cook the Pasta: Start by bringing a large pot of salted water to a boil. Add your pasta and cook according to package instructions until al dente. Remember: it’s always better to slightly undercook the pasta since you’ll mix it with the sauce later! Chef Tip: Reserve about ½ cup of the pasta water before draining.
  2. Sear the Salmon: While your pasta is cooking, heat the olive oil in a large skillet over medium-high heat. Season the salmon fillets with salt and pepper, then place them in the skillet skin-side down. Don’t move the salmon around while it cooks; let it form that beautiful crust. Cook for about 4-5 minutes on one side, then carefully flip and cook for another 3-4 minutes, or until cooked through.
  3. Sauté the Garlic: In the same skillet, add the minced garlic and sauté for about 30 seconds, or until fragrant. Be careful not to burn it!
  4. Make the Cream Sauce: Lower the heat to medium and pour in the heavy cream, stirring to combine with the garlic. Let it simmer gently for a couple of minutes until it thickens slightly. Add a splash of reserved pasta water to help create a creamy sauce.
  5. Add Spinach: Toss in your fresh spinach, stirring until it wilts down into the creamy mixture.
  6. Combine Pasta and Sauce: Add the drained pasta into the skillet, gently tossing everything together.
  7. Flake Salmon: Flake the salmon into large chunks and fold them into your pasta mixture.
  8. Serve It Up: Dish it out and top with Parmesan cheese and parsley.

Notes

For an extra kick, add red pepper flakes or lemon zest. Customize with your favorite vegetables or herbs!
