Creamy Salmon Spinach Pasta

A healthy and indulgent pasta dish featuring salmon and fresh spinach in a creamy sauce.

  • 8 oz pasta (whole wheat or chickpea recommended)
  • 1 lb salmon fillet
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional)

Instructions

  1. Cook the pasta: Start by bringing a large pot of salted water to a boil. Add your pasta and cook according to the package instructions until al dente. Reserve about a cup of the pasta water for later.
  2. Sear the salmon: Heat the olive oil in a large skillet over medium heat. Pat the salmon dry and season with salt and pepper. Add the salmon skin-side down and cook for 4-5 minutes. Flip and cook for another 3-4 minutes until it flakes easily. Set aside.
  3. Sauté the garlic: In the same skillet, add the minced garlic and stir for about 30 seconds until fragrant.
  4. Make the cream sauce: Quickly add the heavy cream and stir. Let it simmer on low heat for 2-3 minutes to thicken.
  5. Add the spinach: Toss in the spinach and stir until it wilts into the sauce.
  6. Combine everything: Flake the salmon into bite-sized pieces and gently fold it into the sauce. Add the cooked pasta and a splash of reserved pasta water, adjusting the seasoning with salt and pepper. Toss until well-coated.
  7. Garnish and serve: Sprinkle grated Parmesan on top and a few cracked black pepper flakes to finish.

Notes

For a lighter option, substitute heavy cream with coconut cream or cashew cream. Feel free to add ingredients like lemon zest, sun-dried tomatoes, or mushrooms for variations.
