Crispy Chicken with Blistered Zucchini and Herby Green Sauce

  • 4 skin-on, boneless chicken thighs
  • 4 large courgettes (zucchini)
  • 20g fine herbs (basil, mint, parsley, or dill)
  • 100g greens (cavalo nero, kale, chard, or baby spinach)
  • 1 large (or 2 small) cloves of garlic
  • 1 lemon
  • 1 green chili
  • Olive oil as needed
  • 3 cups cooked grain of choice (giant couscous, barley, spelt, quinoa, or rice)
  • 4 tbsp thick Greek yogurt

Instructions

  1. Prep Your Ingredients: Gather all your ingredients and pat the chicken thighs dry. Season generously with salt and pepper.
  2. Heat Your Pan: Place your frying pan over medium-high heat and add olive oil.
  3. Cook the Chicken: Sear chicken thighs skin-side down for 7–8 minutes. Flip and cook another 5–7 minutes until internal temperature reaches 165°F (75°C).
  4. Blister the Zucchini: In the same pan, cook the zucchini for 4–5 minutes until blistered and tender.
  5. Make the Herby Green Sauce: Combine herbs, garlic, lemon juice, and salt in a food processor. Drizzle in olive oil while pulsing.
  6. Combine and Serve: Fluff cooked grains, season, and plate with zucchini, chicken, a dollop of Greek yogurt, and drizzle herby sauce on top.

Notes

Serve with a sprinkle of fresh herbs or cherry tomatoes for added color. Adjust heat level with pepper choice.
