Bright, zesty Greek lemon potatoes that are tender and flavorful, perfect as a side dish for any meal.

  • 3 lbs / about 6 medium yellow potatoes
  • 1/4 cup olive oil
  • 1/4 cup freshly squeezed lemon juice (about 2 lemons)
  • 4 garlic cloves (minced)
  • 1 1/2 cups chicken broth or vegetable broth
  • 1 tbsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Fresh parsley (chopped, for garnish)
  • Tzatziki sauce for serving (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Prepare the potatoes by peeling and cutting them into wedges (about 8 wedges per potato).
  3. Create the marinade by whisking together olive oil, lemon juice, minced garlic, oregano, salt, and black pepper.
  4. Combine potato wedges in a large baking dish and pour the marinade over them, tossing to coat evenly.
  5. Add the chicken or vegetable broth to the baking dish, ensuring the potatoes remain visible.
  6. Roast in the oven for 30–40 minutes, tossing halfway through until golden brown and fork-tender.
  7. Garnish with freshly chopped parsley before serving.
