Crispy Halloumi with Fresh Salad and Fluffy Rice

A delightful dish featuring crispy halloumi cheese served with a fresh salad and fluffy rice, perfect for any meal.

Ingredients

  • 1 cup Halloumi Cheese, sliced
  • 4 cups Mixed Salad Greens (spinach, arugula, romaine)
  • 1 cup Tomatoes (cherry or heirloom)
  • 1 cup Cucumber, diced
  • 2 tablespoons Olive Oil
  • 2 tablespoons Lemon Juice
  • Salt, to taste
  • Pepper, to taste
  • 1 cup Rice

Instructions

  1. Prep your rice by rinsing it under cold water and cooking it with water and salt.
  2. Slice your halloumi into 1/2-inch thick pieces.
  3. Heat olive oil in a non-stick skillet over medium heat.
  4. Fry the halloumi for 2-3 minutes on each side until golden.
  5. Prepare the salad by chopping veggies and tossing them together.
  6. Plate the rice, add the salad, and top with crispy halloumi.
