2 lbs carne asada steak
1 onion, chopped
4 cloves garlic, minced
1 cup beef broth
1 tbsp chili powder
1 tsp cumin
1 tsp smoked paprika
1 tsp salt
1/2 tsp black pepper
Tortillas, for serving
Diced tomatoes, for topping
Chopped cilantro, for topping
Lime wedges, for serving
Sliced avocado, for topping
Instructions
Start by trimming any excess fat off your carne asada steak. After trimming, cut the steak into large chunks.
Add a splash of oil to a skillet over medium heat and sauté the chopped onion until translucent, about 5-7 minutes.
Toss in the minced garlic and sauté for an additional minute until fragrant.
Add the sautéed onions and garlic to your slow cooker. Layer in the carne asada, beef broth, chili powder, cumin, smoked paprika, salt, and pepper. Stir well.
Cover your crock pot and set it on low for 480 minutes (8 hours) or high for 240 minutes (4 hours).
Once the cooking time is up, use two forks to shred the carne asada in the crock pot.
Warm your tortillas in a hot skillet or oven.
Assemble the tacos by spooning the shredded carne asada into each tortilla and adding your desired toppings.
